Fabulous Banana Bread Banana bread is always a treat, especially with these cold winter days fast approaching! It's also a great way to use up over-ripe bananas that you don't know what to do with. If you don't have time to make banana bread right away, but your bananas won't last too much longer, simply put them in the freezer and thaw when you are ready to bake! My mom has been making this recipe for our family for years now - it's one of my favourites and now I make it for my daughter too! I hope you enjoy it! Ingredients: 2 cups unbleached flour 2 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 3-4 large ripe bananas 2 egg whites 3/4 cup sugar 1/4 cup of any one of the following: milk, plain or vanilla yogurt, or buttermilk 1 tsp vanilla extract Optional: Walnuts, pecans, other fruit such as berries, or my favourite, chocolate chips! Just use enough to your liking. I usually use about 1/2 a bag of milk chocolate chips for my loaf.
Directions: Preheat oven to 350F. Cost a 9 x 5 inch loaf pan with Pam. In a large bowl combine, flour, baking powder, baking soda, & salt. Make a well in the centre of these dry ingredients In a medium bowl, mash the bananas until smooth. Add the egg whites, sugar, milk/yogurt, & vanilla and stir to mix well. Pour the banana mixture into the dry ingredients and fold together until blended. Pour the batter into the prepared loaf pan and bake until a toothpick comes out clean (about 55-60 minutes) Cool for 10 minutes and enjoy!
